Trying to put back my front rotors I snapped two of them. Long story short I was able to fix one but the other one is outta my hands! Is it ok to ride with one missing bolt? I'm heading to the track tomorrow (well if safe to ride like this)?

I hope to hear good news!!!

No. Pull another out and maybe the hardware store will have a match if you're lucky.

As much as it sucks but I would not risk it either! Brakes are the most important at the track and probably also the most stressed component on a track day!
Good luck getting that sorted out!

You can get pliers or anything on the bolt?

The tab used to remake the tread snapped on me too. This one is hard to drill through

I have seen 125 GP bikes run every other bolt to save weight. I'm not sure that will fly with track day tech. These things have become a must have in our traveling tool box. http://www.thegrabitstore.com/Pages/default.aspx
Heat from a propane torch may be helpful too.

I had to heat up (torch) my rotor bolts to help free them up.
    - Good luck, those are a real PITA.
I do have spares, but I am home, hoping someone can help you.

You will be fine with one missing rotor bolt. Getting it out may be a PIA though. Heat and either a left handed bit or progressively bigger drill bits.

Left handed drill bit. I ham fisted a bolt on my 954 once because I misread the torque spec. I thought it was 80 ft/lbs when it was really like 8 ft/lbs.
