I haven't reread everything here but one other tip is sometimes the axles under these use some weird combinations of bearings, not always but it does happen. At a minimum I'd recommend going ahead and acquiring a set of bearings/races and seals to have on hand just in case, saves a lot of time sourcing them on the road if one fails. Or go a little extra and just buy a spare hub with everything. I carry a brake hub with the races pre-installed and I prepack the bearings and keep them in a Ziploc bag with some extra grease, plus the inner seal, washer, axle nut, etc. Fits in one box tucked away and if you need it no needing to replace races on the side of the road, remove the failed one, clean up the axle stub, install and on your way.

And one of these is handy as well http://www.camco.net/product/trailer-aid-plus-10499/ In some cases it won't lift the other wheel totally off the ground but if not you only need to use a small bottle jack under the other one to get the clearance and is much safer IMO as it kind of takes the place of using a jackstand since it is supporting the bulk of the weight.

It does have Dexter axles, but I probably need to look up the bearing numbers and parts like you suggested.

I did buy one of these...https://www.andersenhitches.com/Products/3620--rapid-jack.aspx
And a 12 ton bottle jack and I'm carrying some additional wood blocking. I've also got a ratchet wrench and extension with a socket for the lug nuts. I'm trying to think of everything I need, but I do appreciate the suggestions/tips.
